Fermented Kimchi for Fermenting Memories

When eaten fresh as a banchan (side dish) alongside a full Korean meal, kimchi is at its best. But when you're cooking with it, the more fermented, sour, and funky it is, the better. In this class, fermentation takes the spotlight, guiding us as we create dishes using kimchi, share personal food stories, and celebrate the spirit of community that lies at the heart of Korean food culture. All food supplies are included, and all levels are welcome! Bring a container to take home leftovers.

Jung-a's offers community cooking experiences to support our own individual and collective relationship with food. These personalized hands-on community-based workshops can take place at your workplace, a school and in your own home.

It’s become very clear to Jung-a that food is more than just the food sitting in front of you; food is full of stories and history. All our foods come from somewhere, from some culture, a meeting of cultures, from the ground. We all are full of food stories, because we all have some kind of a relationship with food. Kimchi is more than fermented vegetables; kimchi reflects who Koreans are as a people, their history, their survival, their culture, their stories. Jung-a's doesn't just teach how to make kimchi and these other Korean dishes, but rather emphasizes the importance of coming together as a group and developing a kind of community spirit (which is key to the tradition of kimchi making), while sharing our stories and taking time to develop a relationship with our food. Jung-a is curious about how noticing and potentially shifting our connection with food can support our relationships with ourselves, each other, the land and our community. Her work comes from her own experience and process with kimchi and making kimchi over the course of the last five years. 

And because of her personal experience with kimchi making, making kimchi and Korean food has become one way to start these kinds of conversations, reflections, discoveries, gatherings. 

We can make any kimchi you'd like. We can also make a mini Korean bapsang, a full meal often including rice, soup, a fish and/or meat dish, kimchi and several side dishes! I also invite you to bring a dish you would like for us to make, something from your own food history that's meaningful in some way to you. 

 

Generally for ages 9 and up & about 3 hours long (may vary depending on the needs of your group). 2-12 people. $50-75 per hour. $40-$150 for ingredients (depending on group size, season and kind of ingredients).
