Meet Jung-a's 김치 Kimchi

Jung-a's makes one of a kind kimchi 김치 made in the valley of Missoula, Montana with vegetables and fruit from local farmers.

You see those 손 sohn (hands) up there in front of the baechu (napa cabbage) leaf mountains? That's to pay respects to all the generations of 손 sohn (hands) that have made 김치 kimchi for thousands of years. 

Without the map of her family's recipe, Ariel/Jung-a has had to learn on her own. From a cabbage-filled multimedia dance performance to a lil sohn-made traditional small-batch kimchi company, 김치 kimchi has taken on a whole life of her own. This 김치 kimchi is for you from a long line of 손 Sohn hands.

Each month Jung-a's will have several different 김치 kimchis on hand, with at least one batch of 배추김치 baechu kimchi (made with fermented seafood), From time to time, you can also get a vegan 김치 kimchi.

What's fermenting?

Each week you can enjoy the queen of all kimchis with her long green napa leaves, tongbaechu kimchi통배추김치. This is the kimchi you generally think of when you think kimchi. From time to time, Jung-a's offers special seasonal kimchis. All batches are made with as many local vegetables and fruits as possible. Each of them has a name and are different in character. What's fermenting?

Here is where the cabbage ((())) started rolling... 

Ariel loves cabbages so much, so much so that she brought them with her on stage in a multimedia dance theater performance called Drip Baby Drip, chopping them, dipping them in water, salting them, sending the water flying in the air, covering cabbage leaves over her eyes. Drip Baby Drip is a personal montage of sorts, piecing together dance, voice, text, sounds and food making. Inspired by Heena Baek's book called Moon Pops, which draws from the Korean folklore about the rabbit(s) making rice cakes in the moon, Drip turned kimchi making into a metaphor for personal fermentation.

Missoula's Kimchi Community

During the time of 김장 kimjang, families and neighbors come together to preserve hundreds of heads of 배추 baechu (napa cabbage), salting, washing, mixing and packing. In the past, kimjang was an act of survival - kimchi helped to provide nourishment for communities to make it through the harsh winters of Korea. 

While it isn't as much about survival, making kimchi is still about connecting, working together and sharing food as a community. Join Jung-a's in creating mini 김장 kimjangs all over Missoula!
